Bowerbird Dining and Events at the Byron Bay Golf Club is the innovative creation of Tom Bower, who comes from a long lineage involved in the hospitality industry.
Tom embarked on his culinary journey by apprenticing at various venues and restaurants across Brisbane and the Gold Coast. His aspirations then took him to Europe, where he enhanced his skills working from quaint local bistros to prestigious Michelin Star restaurants. This period of exploration and learning broadened his culinary horizons significantly.
Upon returning to Australia, Tom chose the picturesque town of Byron Bay to lay down his professional roots. He initially took on the role of Head Chef at the renowned Balcony restaurant. His successful tenure there paved the way for an even more ambitious venture. Tom was given the opportunity to spearhead the kitchen at the Italian Diner in Bangalow, where he was instrumental in developing the menu and culinary direction, which eventually earned the establishment a coveted Good Food Guide Award.
Bowerbird catering has since grown and diversified under Tom’s leadership. It now offers a wide array of exceptional dishes and caters to a variety of events, always emphasizing the use of local produce and suppliers. This commitment ensures that every dish not only tastes fresh but also supports local agriculture and business.
